Non-alcoholic Recipe

Soft and refreshing, these delicate jellies have a bright, balanced flavor with a subtle sweetness. The sparkling lemonade adds a gentle lift, but filtered water works just as well—just add a little extra lemon juice for more depth.

ServES 1

INGREDIENTS

  • 60ml (1/4 cup) Bartender’s Daughter Shirley Syrup

  • 60ml (1/4 cup) sparkling lemonade (or filtered water)

  • 11ml (3/4 tbsp) lemon juice (add an extra 7ml (1/2 tbsp) lemon juice if using water)

  • 3g (1 tbsp) unflavoured gelatin

Just double recipe depending on size of ice/heart mold tray.

METHOD

1. Combine liquids

In a small saucepan, mix Shirley syrup, sparkling lemonade (or water), and lemon juice

2. Bloom the gelatin

Sprinkle 1 tbsp gelatin over the liquid and let sit for 5 minutes to absorb

3. Dissolve the gelatin

Heat over low heat, stirring constantly for 2-3 minutes until fully dissolved. Do not boil

4. Pour into molds

Carefully fill heart-shaped silicone molds using a dropper or spoon (you can always strain to confirm gelatin fully dissolved)

5. chill

Refrigerate for 1-2 hours until set

6. Enjoy!

Pop out and serve store in an airtight container in the fridge for up to 1 week
