Mint meets coconut in this refreshing twist on a classic mojito. Creamy and light, this cocktail offers a tropical flair for mint lovers everywhere.

ServES 1

INGREDIENTS

  • 2 oz (60 ml) white rum

  • 1 oz (30 ml) lime juice

  • 1 oz (30 ml) Bartender’s Daughter Cream of Coconut

  • 6-8 fresh mint leaves

  • Club soda (to top)

  • Crushed ice

METHOD

1. muddle

Muddle mint leaves and lime juice in a glass.

2. mix

Add rum and cream of coconut, then stir well.

3. top

Fill the glass with crushed ice and top with club soda.

4. garnish

Garnish with a sprig of mint for a refreshing finish.

MAKE IT A MOCKTAIL!

Skip the rum for a non-alcoholic Coconut Mojito. Muddle mint and lime juice, add 1 oz (30 ml) Bartender’s Daughter Cream of Coconut, and top with club soda over crushed ice. Stir well and enjoy a creamy, alcohol-free version.
